Gluten Free Green Pizza

Ingredients

  • 80g brown rice
  • 80g white rice (I used long grain)
  • 75g tapioca pearls (or tapioca flour)
  • 45g baby spinach
  • 1 tsp dry yeast
  • 1/3 tsp xanthan gum
  • 1/4 tsp baking powder
  • 1/2 Tbs sugar (optional)
  • 1/2 tsp salt
  • 160mls warm water (40 degrees)
  • 1/2 Tbs olive

 

  1. Turn oven onto 220 degrees fan-forced.
  2. Add rices & tapioca to the Thermomix bowl with blitz for 1.5 minutes speed 9. Add baby spinach, xanthum gum & baking powder & blitz for 10 seconds speed 9. Add remaining ingredients & mix for 15 seconds speed 5.
  3. Knead for 1 minute.
  4. Roll out between 2 pieces of baking paper into 1 large pizza (40cm oval) or 2 small pizzas (20cm round).
  5. Place into a hot oven for 10 minutes to pre-cook.
  6. Top with your favourite toppings then cook for another 12-15 minutes. 
  7. Cut up into pieces & enjoy.

You can choose to omit the baby spinach if you wish.
