Gluten Free Green Pizza
Ingredients
- 80g brown rice
- 80g white rice (I used long grain)
- 75g tapioca pearls (or tapioca flour)
- 45g baby spinach
- 1 tsp dry yeast
- 1/3 tsp xanthan gum
- 1/4 tsp baking powder
- 1/2 Tbs sugar (optional)
- 1/2 tsp salt
- 160mls warm water (40 degrees)
- 1/2 Tbs olive
- Turn oven onto 220 degrees fan-forced.
- Add rices & tapioca to the Thermomix bowl with blitz for 1.5 minutes speed 9. Add baby spinach, xanthum gum & baking powder & blitz for 10 seconds speed 9. Add remaining ingredients & mix for 15 seconds speed 5.
- Knead for 1 minute.
- Roll out between 2 pieces of baking paper into 1 large pizza (40cm oval) or 2 small pizzas (20cm round).
- Place into a hot oven for 10 minutes to pre-cook.
- Top with your favourite toppings then cook for another 12-15 minutes.
- Cut up into pieces & enjoy.
You can choose to omit the baby spinach if you wish.
