Grain Free Coconut Biscuits
I love grain free cooking.
These taste great & are moist in the middle. They are nut free so this means the kiddies can take them to school.
Making your own coconut butter in 30 seconds is easy in the Thermomix.
Did you know when you make your own coconut milk, the pulp that's left over when dried is coconut flour. Just blitz the dried coconut. Saving money.
Free from grains, dairy, gluten, nuts, & soy. Paleo if using honey. I am working on making a vegan version unsing chia seed eggs.
Ingredients
- 360g desicated coconut
- 40g coconut flour
- 100g coconut oil
- 3 small eggs (I weighed my eggs they were 44g each with the shell on)
- 35g honey or golden syrup
- 10g vanilla
- chocolate chips or dried fruit to decorate
- Add desiccated coconut to your bowl. Blitz for 30 seconds speed 9.
- Scrap down & add remaining ingredients & mix for 30 seconds speed 6.5.
- Let mixture sit for 1 minute so it firms a bit.
- With a tablespoon, measure spoonfulls & shape into balls. Press then down lightly. Decorate to liking.
- Pop onto a preheated 150 degree oven for 15 minutes. Cool & enjoy.
This recipe makes 24 biscuits.
