Low FODMAPS soup

Ingredients

  • 1cm piece of ginger
  • top of 2 sping onions
  • 20g garlic infused oil or coconut oil
  • 160g coconut milk
  • 300g pumpkin
  • 200g celeriac or leek leaves
  • 1 Tbs vegetable stock (low Fod-map style)
  • 1 tsp tumeric powder

 

  1. Add ginger & spring onion tops to your bowl & blitz for 3 seconds speed 5.
  2. Scrape down. Add coconut oil or infused oil & cook for 3 minutes 100 speed 1.
  3. Add coconut milk, vegetable stock, tumeric powder & 340g water. 
  4. Insert your simmering basket & add pumpkin & celeriac or leeks to it. 
  5. Cook for 20 minutes varoma temperature speed 2.
  6. Tip simmering basket content carefully into the bowl. Blitz for 1 minutes starting at speed 5 & going up to speed 9.
  7. Enjoy. 

 

You can also steam some chicken fillets at the top if you wish for protein with your meal.
