Quick Chicken Curry
Ingredients
- 2 cloves garlic (omit for low fodmaps)
- 1 tsp minced ginger
- 1 onion, peeled and halved (omit for low fodmaps)
- 1 large carrot
- 10g olive oil
- 1 Tbsp babas meat curry powder
- 1 Tbsp coriander powder
- 1 Tbsp cumin powder
- 500g tomatoes, halved
- 1 tbsp chicken or vegetable stock paste
- 100g water (or wine)
- 700g chicken breasts, thinly sliced
- Coriander leaves to serve (optional)
- Add garlic, onion and carrot to your bowl. Blitz for 3 seconds speed 6. Scrap down.
- Add curry powder, ginger, cumin & coriander to your bowl then cook for 5 minutes 120° speed 1.
- Add tomatoes, stock paste & water & chop for 3 seconds speed 5, Cook for 10 minutes varoma temperature speed 1.
- Add chicken & cook on reverse for 8 minutes 100° slowest speed.
