Quick Chicken Curry

Ingredients 

  • 2 cloves garlic (omit for low fodmaps) 
  • 1 tsp minced ginger 
  • 1 onion, peeled and halved (omit for low fodmaps) 
  • 1 large carrot 
  • 10g olive oil 
  • 1 Tbsp babas meat curry powder 
  • 1 Tbsp coriander powder 
  • 1 Tbsp cumin powder
  • 500g tomatoes, halved 
  • 1 tbsp chicken or vegetable stock paste
  • 100g water (or wine) 
  • 700g chicken breasts, thinly sliced  
  • Coriander leaves to serve (optional) 

 

  1. Add garlic,  onion and carrot to your bowl. Blitz for 3 seconds speed 6. Scrap down. 
  2. Add curry powder, ginger, cumin & coriander to your bowl then cook for 5 minutes 120° speed 1.
  3. Add tomatoes, stock paste & water & chop for 3 seconds speed 5, Cook for 10 minutes varoma temperature speed 1.
  4. Add chicken & cook on reverse for 8 minutes 100° slowest speed.
