Vegan Corn fritters
This yummy recipe only makes 4 fritters.
This recipe is like a green corn fritter. It's egg free, soy free, gluten free, paleo, dairy free, nut free & vegan.
It's great for those with allergies.
These patties are quite soft but super tasty :)
Ingredients
- 2 spring onion, white part only roughly chopped
- 50g baby spinach
- pinch of smoked paprika
- 50g tapioca flour
- 1/2 tsp baking powder
- 70g frozen corn kernels
- herb salt to taste
- Add spring onion & baby spinach to your thermomix bowl & blitz for 1 second speed 7.
- Scrap down & add remaining ingredients.
- Mix on speed 2 until combined.
- Heat a non-stick frying pan & spray with cooking oil.
- Place 4 mounds of mixture onto your frying pan & cook for about 4 minutes each side.
