Vegan Corn fritters

This yummy recipe only makes 4 fritters.

This recipe is like a green corn fritter. It's egg free, soy free, gluten free, paleo, dairy free, nut free & vegan.

It's great for those with allergies.

These patties are quite soft but super tasty :)

 

Ingredients

  • 2 spring onion, white part only roughly chopped
  • 50g baby spinach
  • pinch of smoked paprika
  • 50g tapioca flour
  • 1/2 tsp baking powder
  • 70g frozen corn kernels
  • herb salt to taste 

 

  1. Add spring onion & baby spinach to your thermomix bowl & blitz for 1 second speed 7.
  2. Scrap down & add remaining ingredients. 
  3. Mix on speed 2 until combined.
  4. Heat a non-stick frying pan & spray with cooking oil.
  5. Place 4 mounds of mixture onto your frying pan & cook for about 4 minutes each side.
