Vegan Teff Waffles
Waffles are a favourite in our house.
So when I got my goodnessme box & there was a bag of teff grains I wondered..... What can I make with these???
I of course googled & found many people make them into pancakes, but we love waffles.
I wanted this recipe gluten, dairy, nut, egg & refined sugar free to help others with allergies.
I absolutely love the power of my thermomix to mill my own grains!
This mixture is quite dark in colour & thick in consistency.
Ingredients
- 240g teff grains
- 2 1/2 tsp baking powder
- 2 heaped teaspoons of molasses
- 330 mls coconut milk
- 2 tbs ground chia seeds
- 3 tbs water
- 1 tsp apple cider vinegar
- 1/2 tsp cinnamon powder
- 2 heaped tbs coconut oil
- 2 heaped teaspoons coconut sugar
- Add teff grain into your bowl & blitz for 1 minute speed 9.
- Add remaining ingredients & mix for 15 seconds speed 5.
- Heat your waffle iron to the hottest setting.
- Using a large spoon scoop out 3 spoon fulls onto your preheated waffle iron.
- Cook until light goes off. and continue with remaining batter.
This recipe makes about 8 waffles. Serve with your favouite topping. I fried up some coconut sugar & coconut oil in a frying pan then sauteed some bananas in it.
