Vegan Teff Waffles

Waffles are a favourite in our house. 

So when I got my goodnessme box & there was a bag of teff grains I wondered..... What can I make with these??? 

I of course googled & found many people make them into pancakes, but we love waffles. 

I wanted this recipe gluten, dairy, nut, egg & refined sugar free to help others with allergies. 

I absolutely love the power of my thermomix to mill my own grains! 

This mixture is quite dark in colour & thick in consistency. 

 

Ingredients

  • 240g teff grains
  • 2 1/2 tsp baking powder
  • 2 heaped teaspoons of molasses
  • 330 mls coconut milk
  • 2 tbs ground chia seeds
  • 3 tbs water
  • 1 tsp apple cider vinegar
  • 1/2 tsp cinnamon powder
  • 2 heaped tbs coconut oil
  • 2 heaped teaspoons coconut sugar

 

  1. Add teff grain into your bowl & blitz for 1 minute speed 9. 
  2. Add remaining ingredients & mix for 15 seconds speed 5. 
  3. Heat your waffle iron to the hottest setting. 
  4. Using a large spoon scoop out 3 spoon fulls onto your preheated waffle iron. 
  5. Cook until light goes off. and continue with remaining batter.

 

 

This recipe makes about 8 waffles. Serve with your favouite topping. I fried up some coconut sugar & coconut oil in a frying pan then sauteed some bananas in it.
