Vegetable slice

Ingredients

  • 1 onion, halved
  • 2 zucchinis, roughly chopped
  • 2 carrots, roughly chopped (dont peel)
  • 1 cob of corn cut off the cob OR 100g corn (can be frozen)
  • 160g  flour (I've used gluten free, potato, tapioca or plain)
  • 4 eggs
  • 1 heaped tsp vegetable stock
  • 1 tsp Italian seasoning 
  • 2 rashers bacon, roughly chopped
  • Handful of baby spinach 
  • Optional sprinkle of nutritional yeast 

 

  1. Preheat oven 190 degrees fanforced.
  2. Add onion, zucchini, carrot & bacon to your bowl & chop for 3 seconds speed 5, scrap down bowl. 
  3. Add remaining ingredients into TM bow & mix on reverse for 20 seconds speed 4.5. 
  4. Poor into a lamington sized tin lined with baking paper & sprinkle with nutritional yeast. 
  5. Bake for 45mins to 1 hour depending on your oven.
  6. Cut into pieces. Enjoy hot or cold.
