Coconut Quinoa Curry

Ingredients

  • 80g desiccated coconut
  • 800mls water
  • 2 garlic cloves
  • 1 onion, halved
  • 2cm ginger, peeled
  • 1 tsp turmeric
  • 1 tin diced tomatoes
  • 1 tin drained chickpeas
  • 1 large broccoli head, cut into florets (about 2 cups)
  • 1 large sweet potato, cut into cubes (about 2 cups)
  • 200g beans, trimmed
  • 1/4 cup quinoa
  • 2 tsp soy alternative sauce, or soy sauce

Ingredients

  • 3 cups baby spinach
  • 1/2 cup toasted almonds (can be substituted for seeds for nut free)
  • 1/2 cup dried cranberries
  • 2 tbs sesame seeds
  • 1/2 tbs poppy seeds
  • 3 tbs honey
  • 50 g olive oil
  • 1 tbs apple cider vinegar
  • 1 tbs white wine vinegar

 

Colourful Quinoa Salmon Salad

Ingredients

  • 300g salmon fillet
  • zest of one lemon
  • 1 garlic clove
  • 30g olive oil
  • 50g quinoa
  • 500g water
  • 3 sprigs basil
  • 2 sprigs parsley
  • small amount of fresh chives
  • 1 tsp mustard
  • 1 tsp apple cider vinger or lemon juice
  • 100g baby spinach
  • 1/4 red onion
  • 1/4 red capsicum, halved
  • 1 small cucumber, halved 
  • 2 tomatoes, diced
  • 1/2 avocado, cut into slices
  • 2 tbs pepita seeds
  • 2 tbs dried cranberries

 

Nutty Butter balls

Ingredients

  • 25g desiccated coconut
  • 40g raw cashews
  • 155g medjool dates
  • 30 salted peanuts
  • 160g peanut butter
  • 25g honey

 

  1. Add all ingredients into your thermomix & mix for 15 seconds speed 8.
  2. Roll into balls & enjoy.

 

Makes about 20 (depending on the size)

Keep in the refrigerator for about a week
