Soy alternative sauce

Ingredients

  • 30g beef or vegetable stock paste (I've tested both)
  • 375mls water
  • 30g coconut sugar
  • 40g molasses
  • 45g balsamic vinegar
  • 1/8 heaped tsp  black pepper
  • 1/8 heaped tsp garlic powder 
  • 1/4 tsp salt
  • 1/4 tsp fish sauce

 

  1. Place all ingredients into your bowl. Place simmering basket on top & cook varoma temperature 19 minutes speed 1.5.
  2. Store in the fridge.

Gluten-Free lemon poke cake

Ingredients

  • 110g brown rice
  • 30g tapioca pearls
  • 60g potato flour
  • 1.5 tsps baking powder
  • 1/2 tsp salt
  • 1/2 tsp xanthun gum
  • 200g raw sugar
  • Peel of 1 lemon
  • 2 eggs
  • 120g milk of choice (I used almond)
  • 105g avocado oil (of grapeseed/coconut/vegetable)
  • 1 tsp vanilla extract

Lemon curd

  • 80g coconut oil
  • 80g coconut sugar
  • zest of 1 lemon
  • 45g lemon juice
  • 2 eggs

 

Chicken cacciatore with mashed potato

Ingredients

  • 1 brown onion, halved
  • 1 garlic clove
  • 2 springs of parsley
  • 2 sprigs of basil
  • 30g olive oil
  • 1 kg chicken thighs cut into halves
  • 400g can tinned tomatoes
  • 100g white wine
  • 1 tbs chicken stock
  • 1tsp coconut sugar
  • 2 pinches of salt & pepper
  • 150g mushrooms sliced
  • 1 green capsicum (or red) sliced
  • 2 potatoes, peeled & diced
  • 2 small sweet potatoes peeled & diced
  • 100g baby spinach roughly chopped
  •  50g milk of choice plus seasoning or herbamare for mash
  • sliced olives to serve

Moo Pie

Ingredients

  • 500g beef mince
  • 1 onion
  • 40g olive oil
  • 2 small carrots
  • 1 zucchini
  • 1/2 red capsicum
  • 75g frozen peas 
  • 100g red wine
  • 1 kg red potatoes peeled & diced (i prefer to peel mine but many people don't)
  • if you don't want potatoes use celeriac or sweet potato
  • 1 tsp beef stock
  • 1 jar pasta sauce
  • 1 tbs vegetable stock
  • 1/2 - 1 cup water or milk
  • Your choice of cheese
