Hidden Veggie Scrolls

Ingredients

 

  1. Place cheeses into your bowl & chop for 8 seconds speed 9 (this will be a loud noise) Set aside.
  2. Without cleaning your bowl add baby spinach & chop 5 seconds speed 7. Scrap down & blitz again for 2 seconds speed 6.
  3. Add water & yeast. Heat for 2 minutes 37 degrees speed 1.
  4. Add flour, oil, salt & bakers flour & knead for 2 minutes. 
  5. Wrap in your Thermomix silicon mat & place in a warm spot for 1 hour. I place a cup of hot water in the microwave & close the door for an hour.
  6. Roll your dough out into a large rectangle shape (similar size to your silicon mat shape). Spread with hidden veggie sauce & top with cheese & bacon leaving an inch gap along the farthest edge (where you will end your scroll).
  7. Roll along the longer edge into a Swiss roll shape. Using unflavoured dental floss slide it under your log. Bring the ends up & cross over - pulling away from each other. This with cut your scrolls into perfect shapes without squashing them (like a knife would). Continue cutting until you have about 8-12 scrolls (depending on the size you wish for). 
  8. Place onto a silicon mat (leaving a 3-4cm gap between scrolls) & place into a cold oven. Turn oven on 200 degrees & cook for 20-25 minutes depending on your oven & size on scrolls. 
  9. Allow to cool slightly before enjoying. These can be placed into zip lock bags or containers for school lunches.
