Vegan Teff Waffles

Waffles are a favourite in our house. 

So when I got my goodnessme box & there was a bag of teff grains I wondered..... What can I make with these??? 

I of course googled & found many people make them into pancakes, but we love waffles. 

I wanted this recipe gluten, dairy, nut, egg & refined sugar free to help others with allergies. 

I absolutely love the power of my thermomix to mill my own grains! 

This mixture is quite dark in colour & thick in consistency. 

 

Ingredients

Gluten-Free lemon poke cake

Ingredients

  • 110g brown rice
  • 30g tapioca pearls
  • 60g potato flour
  • 1.5 tsps baking powder
  • 1/2 tsp salt
  • 1/2 tsp xanthun gum
  • 200g raw sugar
  • Peel of 1 lemon
  • 2 eggs
  • 120g milk of choice (I used almond)
  • 105g avocado oil (of grapeseed/coconut/vegetable)
  • 1 tsp vanilla extract

Lemon curd

  • 80g coconut oil
  • 80g coconut sugar
  • zest of 1 lemon
  • 45g lemon juice
  • 2 eggs

 

Quick Chicken Curry

Ingredients 

  • 2 cloves garlic (omit for low fodmaps) 
  • 1 tsp minced ginger 
  • 1 onion, peeled and halved (omit for low fodmaps) 
  • 1 large carrot 
  • 10g olive oil 
  • 1 Tbsp babas meat curry powder 
  • 1 Tbsp coriander powder 
  • 1 Tbsp cumin powder
  • 500g tomatoes, halved 
  • 1 tbsp chicken or vegetable stock paste
  • 100g water (or wine) 
  • 700g chicken breasts, thinly sliced  
  • Coriander leaves to serve (optional)
