My absolute favourite way to start the day is with the yummy filling breakfast.

I hate being hungry so making sure I get eat a filling breakfast is super important for me. Having intolerances can be difficult at breakfast when you want something tasty & quick, so that's why I love this grain free muesli.

I love grain free cooking.

These taste great & are moist in the middle. They are nut free so this means the kiddies can take them to school.

Making your own coconut butter in 30 seconds is easy in the Thermomix.

Did you know when you make your own coconut milk, the pulp that's left over when dried is coconut flour. Just blitz the dried coconut.  Saving money. 

Free from grains, dairy, gluten, nuts, & soy. Paleo if using honey. I am working on making a vegan version unsing chia seed eggs.

Raw Carrot Cake

Ingredients
Base

  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1/2 vanilla bean
  • peel of one orange
  • 120g carrot, un-peeled & cut into chunks
  • 140g medjool dates
  • 40g shredded coconut
  • 1 tsp mixed spice

Topping

  • 1/2 cup cashews (soaked for 20 minutes in hot water, then drained) 
  • 45g coconut cream (solidified part)
  • 60g water
  • 20g coconut oil
  • 1/2 tsp vanilla paste
  • 25g maple syrup

 

Chicken cacciatore with mashed potato

Ingredients

  • 1 brown onion, halved
  • 1 garlic clove
  • 2 springs of parsley
  • 2 sprigs of basil
  • 30g olive oil
  • 1 kg chicken thighs cut into halves
  • 400g can tinned tomatoes
  • 100g white wine
  • 1 tbs chicken stock
  • 1tsp coconut sugar
  • 2 pinches of salt & pepper
  • 150g mushrooms sliced
  • 1 green capsicum (or red) sliced
  • 2 potatoes, peeled & diced
  • 2 small sweet potatoes peeled & diced
  • 100g baby spinach roughly chopped
  •  50g milk of choice plus seasoning or herbamare for mash
  • sliced olives to serve
