My absolute favourite way to start the day is with the yummy filling breakfast.

I hate being hungry so making sure I get eat a filling breakfast is super important for me. Having intolerances can be difficult at breakfast when you want something tasty & quick, so that's why I love this grain free muesli.

I love grain free cooking.

These taste great & are moist in the middle. They are nut free so this means the kiddies can take them to school.

Making your own coconut butter in 30 seconds is easy in the Thermomix.

Did you know when you make your own coconut milk, the pulp that's left over when dried is coconut flour. Just blitz the dried coconut.  Saving money. 

Free from grains, dairy, gluten, nuts, & soy. Paleo if using honey. I am working on making a vegan version unsing chia seed eggs. 

 

Ingredients

Warm Green smoothie

Ingredients

  • 300mls coconut water
  • 30g raw cashews
  • 1 tbs coconut sugar
  • 40g baby spinach
  • 30g avocado
  • 1/4 tsp mesquite powder

 

  1. Add coconut water, coconut sugar & cashews into your thermomix & mix for 1 minute speed 9. This makes the milk - no need to drain.
  2. Heat for 4 minutes speed 3 70 degrees.
  3. Add baby spinach, avocado & mesquite powder & mix for 45 seconds starting at speed 5 then going slowly to speed 9. 

Tri-colour salad

Ingredients

  • 3 cups baby spinach
  • 1/2 cup toasted almonds (can be substituted for seeds for nut free)
  • 1/2 cup dried cranberries
  • 2 tbs sesame seeds
  • 1/2 tbs poppy seeds
  • 3 tbs honey
  • 50 g olive oil
  • 1 tbs apple cider vinegar
  • 1 tbs white wine vinegar

 

'Cheesy" puffs

Ingredients

  • 160g dairy free milk (i used almond milk)
  • 60g coconut oil
  • 1 tsp salt
  • 1 egg
  • 170g arrowroot flour
  • 1 Tbs nutritional yeast

 

  1. Place all ingredients into the thermomix & blitz for 20 seconds speed 8.
  2. Pour into greased mini muffin tins ,filling half way.
  3. Cook for 20 minutes in a pre-heated 220 degree oven.

Makes 24
