Moist Lunchbox Friendly Carrot Banana Muffins

Coming up with recipes is hard work but making them up means I can share them with you!

Moist muffins that are gluten free are hard to make. These last for up to a week. I pop mine in the freezer in containers, labeled & ready for school

This one is designed for mums that want veggies in as well as fruit plus the muffin is sugar free!! Perfect for lunch boxes. If you'd like to add almonds you can swap them for sunflower seeds.

Ingredients

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1.5 tsp sweet paprika
  • 1 tbsp Italian mixed herbs
  • 1 tsp sumac
  • 1 tsp pizza seasoning
  • 2 tsp salt
  • 80g parmesan cheese
  • 100g mozzarella cheese
  • 100g tasty cheese
  • 400g bakers flour
  • 200g cold water

Dairy-Free Caramel Popcorn

Ingredients

  • 75g coconut sugar
  • 40g coconut oil
  • 55g honey
  • 3 cups popped popcorn
     
  1. Put all ingredients into your Thermomix bowl & cook for 10 minutes varoma temperature speed 2.
  2. Once the timer goes off, pour over the popped popcorn. Pour onto some baking paper to cool. Then enjoy. 

 

Please note TM31 customers that Varoma on the TM5 is hotter. So please cook for a longer time.

Fruit Bliss Balls

Ingredients

  • 40g dried apricots (I use home dried apricots)
  • 45g dried cranberries (I use organic)
  • 30g sunflower seeds
  • 50g pepita seeds
  • 60g dates (organic)
  • 25g almonds (can just add more seeds if you want nut free)
  • 5g cacao powder
  • 55g sultanas (organic)
  • 1/2 tsp chia seeds (I use organic)

 

  1. Add all ingredients & mix for 1 minutes speed 9. 
  2. Roll into balls 1 tablespoon balls & enjoy.

 

Keep refrigerated & consume within 3 days
