Veggie filled paella
My absolute favourite meal is paella & one with a good crust on the bottom too.... So how do you get that in the thermomix??
Well it's a good helper at chopping, sauteing & heating and the rest is done in a paella pan to get a good crust because that's what it's all about.
I love this dish because of its flavours & healthy bone broth use plus of course all the veggies.
You can serve this on top of baby spinach if you want an extra bit of green.
Ingredients
Chicken Noodle Soup
Ingredients
- 2 large carrots
- 2 stalks celery
- 2 zucchinis
- 1 onion
- 1 or 2 garlic cloves
- 1 tomato
- 20g oil of choice or fat from bone broth
- 1200mls chicken bone broth
- chicken meat left over from the broth (I used chicken legs in my bone broth so I had left over meat from 8 drum sticks)
- 1-2 tbs of chicken stock paste
- 70g brown vermilceli noodles
- Kale to serve
Colourful Quinoa Salmon Salad
Ingredients
- 300g salmon fillet
- zest of one lemon
- 1 garlic clove
- 30g olive oil
- 50g quinoa
- 500g water
- 3 sprigs basil
- 2 sprigs parsley
- small amount of fresh chives
- 1 tsp mustard
- 1 tsp apple cider vinger or lemon juice
- 100g baby spinach
- 1/4 red onion
- 1/4 red capsicum, halved
- 1 small cucumber, halved
- 2 tomatoes, diced
- 1/2 avocado, cut into slices
- 2 tbs pepita seeds
- 2 tbs dried cranberries
Chicken & broccoli risoni soup
Ingredients
- 2 spring onions, white part only OR 1 small onion halved
- 1 clove of garlic,
- 1 stalk of celery
- 20g olive oil
- 860g water
- 2 tbs chicken stock
- 1 tin creamed corn
- 400g chicken breasts OR thighs cut into large 5cm pieces
- 160g risoni pasta OR small pasta OR gluten free pasta
- 160g broccoli
- 100g baby spinach
Chicken cacciatore with mashed potato
Ingredients
- 1 brown onion, halved
- 1 garlic clove
- 2 springs of parsley
- 2 sprigs of basil
- 30g olive oil
- 1 kg chicken thighs cut into halves
- 400g can tinned tomatoes
- 100g white wine
- 1 tbs chicken stock
- 1tsp coconut sugar
- 2 pinches of salt & pepper
- 150g mushrooms sliced
- 1 green capsicum (or red) sliced
- 2 potatoes, peeled & diced
- 2 small sweet potatoes peeled & diced
- 100g baby spinach roughly chopped
- 50g milk of choice plus seasoning or herbamare for mash
- sliced olives to serve
Moo Pie
Ingredients
- 500g beef mince
- 1 onion
- 40g olive oil
- 2 small carrots
- 1 zucchini
- 1/2 red capsicum
- 75g frozen peas
- 100g red wine
- 1 kg red potatoes peeled & diced (i prefer to peel mine but many people don't)
- if you don't want potatoes use celeriac or sweet potato
- 1 tsp beef stock
- 1 jar pasta sauce
- 1 tbs vegetable stock
- 1/2 - 1 cup water or milk
- Your choice of cheese
